Schwäbische Kartoffelsuppe (Swabian Potato Soup)
3 potatoes, peeled, thinly sliced
1 medium onion, chopped
2 tablespoons butter
1 cup diced cooked beef
8 cups beef broth
Salt & pepper to taste
2 cups cooked spätzle (or egg noodles)
Simple and quick: Cook potatoes and onions in butter until the onions are golden. Add meat and broth; salt as needed. Simmer until potatoes are very soft. Season to taste with salt & pepper and add spätzle.
